One of the things I want to do in 2016 is to make greater use of our cookbooks. We have about a dozen lined up in the kitchen and whilst I love looking through them I very rarely try out the recipes, which is silly!
So two weeks ago, I rooted through the books for inspiration for tea and ended up picking ‘Carbonara, Marinara, Napolitana: A Cook’s Book of Pasta’. Which by the way is on Amazon for 21p!
Pasta is great comfort food and is mostly uncomplicated to make, and this book is full of simple and quick dishes to try out. They are the kind of meals you can easily dish up on a workday evening.
After a quick flick through I decided to do fusilli with ham and broccoli.
This meal was really easy to make. Start with a big pot of pasta. As always, you must do twice as much pasta as you actually need because no one knows how to correctly portion pasta!
Then fry up some ham steaks, cut into strips and add some spring onions.
Then I added in mushrooms, garlic, broccoli, parsley and double cream. The double cream does stop this meal from being super healthy but it does make it very, very tasty!
And then in no time at all I had two full plates of pasta goodness!
I really enjoyed using our recipe books and was looking forward to trying out more recipes….and then the next day my waters broke and I haven’t cooked a meal since! Think it may be a while untilll the next Cathy’s Kitchen post!
